Chef de Cuisine, Tavernetta Vail
Born and raised in Lincoln, Nebraska, Ethan Diamant attended The Culinary Institute of America at Hyde Park and began his culinary career as a line cook at the renowned and beloved Gramercy Tavern in New York City. After three years in New York, Diamant joined Frasca Hospitality Group in 2020. He worked at Sunday Vinyl and Michelin Bib Gourmand-awarded Tavernetta Denver before joining One Michelin-starred Frasca Food and Wine in the summer of 2021, becoming Sous Chef at the restaurant in 2023. Currently, as Chef de Cuisine at Tavernetta Vail, Diamant draws inspiration from across Italy and the alpine cuisine from Northern Italy, as well as Colorado’s mountain ingredients.
